A big part of Darden’s learning experience is in its Global Experiential learning – Consulting, Immersion, Client and Topic courses. A large percentage (35% by function and 34% by industry) choose consulting. With a full-page Ad, my friend announced the opening of the first multi-cuisine Restaurant in our town. Daily sales crossed Rs 100,000, and the reviews were all in 4 and 5 stars. Last year, when I joined my friend for lunch, the empty tables conveyed the desperation in his face. He had fired 50% of the waiting staff.


The first year was a roaring success. After the peak Christmas season, 10 waiting staff and the chief cook quit. On interviewing the staff, they shared the fear, “no one cares about how hard we work.”
